| 1. | Spray the inside of a mug or small ramekin with some olive oil (I used a 6 oz. ramekin). |
| 2. | Add the egg and whisk well. |
| 3. | Add the remaining ingredients and mix up well with a fork. |
| 4. | Microwave for 60 seconds or bake in a 350 degree oven for 15-20 minutes (don’t over bake). |
| 5. | Once it is done baking, pop out of dish to cool. Slice in half onto plate and top with desired toppings. |
| 6. | Serves 1. |
