Paleo Breakfast Casserole

Egg, sausage, bacon, & sweet potato


12eggs, whisked.
1/2lb breakfast sausage. [i used a hot breakfast sausage from the market]
1/2lb bacon
1large sweet potato, shredded
1/2yellow onion, diced
2tbsp hot sauce [nom nom paleo has a good homemade sriracha recipe. I cheated and used store bought]
1tsp garlic powder
1tsp onion powder
1tsp salt [optional]
1tsp pepper [optional]


1.Pre-heat oven to 375°
2.Cook sausage on skillet until done. Cook the bacon how you choose. After bacon is done, cut into bite size pieces.
3.While meat is cooking, dice onion & shred sweet potato. [food processor comes in handy for this task]
4.Whisk eggs in large bowl.
5.Add meat, onion, sweet potato, & the rest of the ingredients to the bowl with the whisked eggs. Mix together.
6.Grease 8x8 or 9x9 glass dish. Add egg mixture to it.
7.Cook 25-30 minutes or until there is no running part of the casserole. [mine took 40 minutes b/c I used a quart size ceramic dish]
8.Be patient & keep your eye on it. It'll brown a little on the top.
9.Cool for 10 minutes & enjoy!
