1. | Pre-heat oven to 375° |
2. | Cook sausage on skillet until done. Cook the bacon how you choose. After bacon is done, cut into bite size pieces. |
3. | While meat is cooking, dice onion & shred sweet potato. [food processor comes in handy for this task] |
4. | Whisk eggs in large bowl. |
5. | Add meat, onion, sweet potato, & the rest of the ingredients to the bowl with the whisked eggs. Mix together. |
6. | Grease 8x8 or 9x9 glass dish. Add egg mixture to it. |
7. | Cook 25-30 minutes or until there is no running part of the casserole. [mine took 40 minutes b/c I used a quart size ceramic dish] |
8. | Be patient & keep your eye on it. It'll brown a little on the top. |
9. | Cool for 10 minutes & enjoy! |
