Leslie's Granola

Oat, nut and dried fruit granola.

INGREDIENTS

6cups rolled oats
1 1/2cups sliced almonds
1/2cup pumpkin seeds [no longer including]
1/2cup pecans, crushed or cut into small pieces
1/2cup unsweeted coconut, shredded
1/4cup raw wheat germ
1tsp ground cinnamon
dash salt [no longer including]
1/2cup, plus 3 tbls honey
1/2cup dried sour cherries, unsweetened, finely chopped
1/2cup dried cranberries, finely chopped

INSTRUCTIONS

1.Preheat the oven to 300º
2.Add the oats, pumpkins seeds, and almonds to large sauté pan and cook over medium-low heat, strring occasionally. 5-7 minutes until the aroma is distinct.
3.Add pecans. Cook for about 2 minutes, stirring frequently.
4.Add the coconut and wheat germ. Cook for 2 minutes.
5.Turn off heat and add cinnamon and salt. Stir. Drizzle honey over mixture, folding in until all the honey has been incorporated.
6.Transfer to a baking sheet [no parchment or oil]
7.Bake for 20 minutes. Stir. Repeat twice. Sometimes it does need more time. We look for slightly crispy bits around the edges, but not overcooked.
8.Add the dried fruit, stir, and cool on a rack. Stir some more if it is convenient.
