| 1. | Preheat the oven to 300º |
| 2. | Add the oats, pumpkins seeds, and almonds to large sauté pan and cook over medium-low heat, strring occasionally. 5-7 minutes until the aroma is distinct. |
| 3. | Add pecans. Cook for about 2 minutes, stirring frequently. |
| 4. | Add the coconut and wheat germ. Cook for 2 minutes. |
| 5. | Turn off heat and add cinnamon and salt. Stir. Drizzle honey over mixture, folding in until all the honey has been incorporated. |
| 6. | Transfer to a baking sheet [no parchment or oil] |
| 7. | Bake for 20 minutes. Stir. Repeat twice. Sometimes it does need more time. We look for slightly crispy bits around the edges, but not overcooked. |
| 8. | Add the dried fruit, stir, and cool on a rack. Stir some more if it is convenient. |
