Peach Habanero Barbecue Sauce

Sweet and spicy Memphis style sauce.

INGREDIENTS

3tbsp vegetable oil
4peaches, peeled, pitted and chopped
2habanero peppers, sliced in half, one seeded
1medium onion, minced
1clove garlic, minced
1/4green bell pepper, cored, seeded and minced
1/2cup ketchup
1/2cup tomato sauce
3tbsp cider vinegar
3tbsp Worcestershire sauce
2tbsp lemon juice
1tsp hot sauce
1/2tsp liquid smoke
2tbsp honey
3tbsp dark brown sugar
2tbsp dijon mustard
1tbsp dry mustard
1/2tsp black pepper
salt to taste

INSTRUCTIONS

1.Heat oil to medium in a saucepan. Sautee onion, bell pepper and garlic until soft, but not brown.
2.Stir in all other ingredients except peaches, and add 1/2 cup water. Bring to a boil, then reduce heat and let sauce simmer, uncovered, until thickened. Stir frequently, so it doesn't burn. After 5 minutes, add peaches and continue to simmer for about 10 minutes, adding water if it gets too thick. When peaches are starting to fall apart, remove from heat and puree until silky with a stick blender. Serve at room temperature.
