Tomato Pie - Edisto Tomato Pie
Excellent tomato pie recipe I got from 'Pon Top Edisto Cook Book from the low country in Edisto, SC.
INGREDIENTS
1 to 9
inch deep dish pie shell prebaked @ 375 degrees for 10 minutes.

large tomatoes, peeled and diced
1/2
teaspoon salt
1/2
teaspoon pepper
3
teaspoons dried basil
garlic powder to taste
3/4
cup mayonnaise
1 1/4
cup grated cheddar cheese
INSTRUCTIONS
1.
Layer tomatoes in pre-baked pie shell, sprinkling each layer with salt, pepper, basil and garlic powder.

Mix together grated cheese and mayonnaise. Spread on top of tomatoes. Bake @ 350 for 35 minutes or until golden and bubbly.
3.
Let stand 5 min. and serve.
