Super Soft Whole Grain Sandwich Bread


2c. whole wheat pastry or spelt flour
1c. unbleached all-purpose flour
1T. olive oil, melted coconut oil or melted organic butter
3T. honey, agave or maple syrup
2T. lemon juice, apple cider vinegar or whole milk organic yogurt
1 1/3c. water
1T active dry yeast
1 1/2t. salt


1.Combine flours, oil or butter, sweetener, lemon juice, vinegar or yogurt and water in a large bowl.
2.The acidity of the lemon juice, vinegar or yogurt theoretically breaks down the phytic acid in the wheat and thus produces a softer, more digestible bread.
3.When your ingredients are combined, transfer the dough to your bread machine and allow dough to sit overnight or up to 24 hours.
4.In the morning, add your yeast and salt and press start on the ultrafast setting.
