Single Serve Pumpkin Pie - S

INGREDIENTS

CRUST:
1tablespoon ground flax
1tablespoon almond flour
1tablespoon coconut flakes (chopped into tiny bits if desired)
1tablespoon unsalted butter
1teaspoon Truvia
FILLING:
1/2cup pumpkin puree
3tablespoons egg whites
1/4teaspoon vanilla
1/2teaspoon cinnamon
1/2teaspoon pumpkin pie spice
1/8teaspoon sea salt
1tablespoon Truvia

INSTRUCTIONS

1.CRUST:
2.In a small bowl mix the above ingredients until crumbly.
3.Grease a larger sized ramekin (I have a little bigger one than what I use for my muffins and I used that.)
4.Press crust mixture into bottom of ramekin with spoon.
5.FILLING:
6.In a small bowl mix the above ingredients and then pour on top of crust in ramekin.
7.Bake in the microwave for 2 minutes*. Allow to cool some before eating. This will allow it to firm up a bit more.
