Cucumber and Pineapple Pickle

INGREDIENTS

1/2cup vinegar
2/3cup water
3/4cup sugar
1teaspoon salt
1Cucumber, peeled, seeded and cut into long strips
1Carrot, peeled and cut into long strips
1/2Pineapple, peeled and cut into small slices
1red chilli, seeds removed and sliced thickly
3bird's eye chillies, diced
1Onion, sliced thinly

INSTRUCTIONS

1.Mix vinegar, water, sugar and salt together in a small saucepan.
2.Heat as necessary to ensure all sugar and salt dissolves.
3.Transfer to refrigerator to cool.
4.Mix everything else together in a salad bowl.
5.Pour chilled pickling solution over salad and stir well.
6.Cover and refrigerate for one hour.
