Tamarind Chutney
INGREDIENTS

grams tamarind concentrate
2
cups fresh orange or mandarin sections
1/2
cup jaggery
1
teaspoon hot chili powder
1
teaspoon chili flakes
2
teaspoons ground cumin
1
teaspoon lemongrass paste
1
teaspoon galangal paste
INSTRUCTIONS
1.
Add orange sections to a medium sauce pan.
2.
Add tamarind concentrate and remove pits.
3.
Add jaggery and spices.
4.
Blend with a hand blender until smooth.
5.
Bring to a boil, reduce heat and simmer for five minutes, stirring constantly.
