Tamarind Chutney

INGREDIENTS

300grams tamarind concentrate
2cups fresh orange or mandarin sections
1/2cup jaggery
1teaspoon hot chili powder
1teaspoon chili flakes
2teaspoons ground cumin
1teaspoon lemongrass paste
1teaspoon galangal paste

INSTRUCTIONS

1.Add orange sections to a medium sauce pan.
2.Add tamarind concentrate and remove pits.
3.Add jaggery and spices.
4.Blend with a hand blender until smooth.
5.Bring to a boil, reduce heat and simmer for five minutes, stirring constantly.
