Coconut Dream Cake - S


1Tablespoon coconut flour
1Tablespoon unsweetened, shredded coconut (I used finely shredded coconut)
1Tablespoon Truvia (or other sweetener equivalent to 2 T. sugar)
1Tablespoon unsweetened almond milk (vanilla or plain)
1teaspoon butter
1teaspoon ground flax
1/4teaspoon chia seeds
1/4teaspoon baking powder (aluminum free)


1.Spray the inside of a mug or small ramekin with some olive oil (I used a 6 oz. ramekin).
2.Add the egg and whisk well.
3.Add the remaining ingredients and mix up well with a fork.
4.Microwave for 60 seconds or bake in a 350 degree oven for 15-20 minutes (don’t over bake).
5.Once it is done baking, pop out of dish to cool. Slice in half onto plate and top with desired toppings.
6.Serves 1.
